iron chef ingredient: pumpkin

so easy!

4 lbs of cut up pumpkin (took out the seeds and peeled it)
6 cloves of garlic, thinly sliced
6 large shallots, quartered

whisk 1/3c olive oil, 3T balsamic vinegar, salt, pepper, 1T sage & 1T oregano.

pour over the veggies, mix and coat, put in a roasting pan for about an hour at 425. turn the veggies half way through for even roasting.

it was a hit!
